Ingredients:
250g halloumi, sliced
4 cups watermelon cubes
1 cup cherry tomatoes, halved
1 small cucumber, sliced
Handful of fresh mint leaves
Olive oil and lemon juice to drizzle
Salt and pepper to taste
Method
1. Heat a grill pan and cook the halloumi slices until golden on both sides.
2. In a large bowl combine watermelon, tomatoes and cucumber.
3. Add the grilled halloumi and mint.
4. Drizzle with olive oil and lemon juice and season to taste.
