Our Summer Go-To - Grilled Halloumi and Watermelon Salad

Summer in Victoria is a chance to enjoy fresh, vibrant flavours with friends and family. Here’s a refreshing recipe perfect for long days by the pool or a relaxed weekend lunch:

Ingredients:

  • 250g halloumi, sliced

  • 4 cups watermelon cubes

  • 1 cup cherry tomatoes, halved

  • 1 small cucumber, sliced

  • Handful of fresh mint leaves

  • Olive oil and lemon juice to drizzle

  • Salt and pepper to taste

Method

1. Heat a grill pan and cook the halloumi slices until golden on both sides.

2. In a large bowl combine watermelon, tomatoes and cucumber.

3. Add the grilled halloumi and mint.

4. Drizzle with olive oil and lemon juice and season to taste.

It’s simple, refreshing and a great dish to share as part of summer entertaining.
